Best Ever Lemon Bars
If you like lemon this one’s for you! This recipe for lemon bars has been a family favourite for years and I’ve been wanting to share it with you for a while now. Since we finished our kitchen renovation, I’ve really been enjoying spending time in the new kitchen cooking and baking and these Best Ever Lemon Bars are always a hit and never last long! They’re perfect for those end of summer picnics, back to school lunches or a mid-afternoon snack with a cup of tea or coffee. Did I mention how easy they are to make? Ingredients
Method
- Mix flour, icing sugar and butter together as you would for a pie crust.
- Press into a 13 x 9" pan lined with parchment paper.
- Bake at 350℉ for 20-25 minutes until a hint of brown.
- Mix eggs and lemon juice together - don't beat.
- Mix sugar, flour and baking powder together.
- Combine with egg mixture.
- Spread over top of cooked base.
- Return to 350℉ oven for 20 to 25 minutes until brown.
- Sprinkle with icing sugar while hot.
- Chill well and cut into squares.
- Enjoy!

You can cook the base in an ungreased pan or line it with parchment paper like I do. I’ve found it makes it so much easier to remove them from the pan and cut into squares. Be sure to dust with icing sugar and chill well before cutting. These squares taste best chilled so I like to cut and plate them and pop them back into the fridge until I’m ready to serve them.

These Best Ever Lemon Bars are delicious at any time of year and are especially pretty at Christmastime paired with holiday cookies.
