Macaron Angel Food Cake

Today I’m sharing a super easy dessert that looks fancy, tastes delicious and is super easy to prepare! This Macaron Angel Food Cake is the perfect light and luscious touch for your spring or Easter table, Mother’s Day Celebration or wedding or baby shower. I’m joining some blogger friends who are also sharing their favorite spring desserts today, so be sure to pop by and check out all of the delicious recipes at the end of this post!

To prepare this dessert (and keep it super simple),  I used a store-bought angel food cake and macarons, but you can make your own from scratch using your favorite recipe if you prefer. This dessert is easily adaptable! I’ve made it many times over the years and it can be topped with fruit or even edible flowers for a special occasion.

 

Macaron Angel Food Cake

Ingredients:

1 prepared angel food cake
7-10 macarons
1 pkg. (4-serving size) vanilla instant pudding
1 can (14 oz./398 ml) crushed pineapple in juice, undrained
1 cup thawed Cool Whip whipped topping
1/2 cup flaked sweetened coconut

Method:

  1. Mix dry pudding mix and pineapple in a medium bowl. Fold in whipped topping.
  2. Cut cake horizontally into 3 layers using a serrated knife.
  3. Place bottom cake layer on a cake stand and top with one-third of the pudding/pineapple mixture.
  4. Repeat 2 more times.
  5. Garnish top and sides with coconut by gently pressing it into the pudding/pineapple mixture.
  6. Refrigerate at least one hour. Top with macarons before serving.

Makes 10 servings.
