Best Ever Lemon Bars

Gooey lemon filling over a flaky shortbread crust

Ingredients
  

  • 2 cups all purpose flour
  • 1 cup butter melted
  • ¼ cup icing sugar
  • 4 eggs beaten
  • cup lemon juice
  • 2 cups sugar
  • ¼ cup flour
  • 1 tsp. baking powder

Method
 

Base Layer:
  1. Mix flour, icing sugar and butter together as you would for a pie crust.
  2. Press into a 13 x 9" pan lined with parchment paper.
  3. Bake at 350℉ for 20-25 minutes until a hint of brown.
Filling:
  1. Mix eggs and lemon juice together - don't beat.
  2. Mix sugar, flour and baking powder together.
  3. Combine with egg mixture.
  4. Spread over top of cooked base.
  5. Return to 350℉ oven for 20 to 25 minutes until brown.
  6. Sprinkle with icing sugar while hot.
  7. Chill well and cut into squares.
  8. Enjoy!
