Salted Butterscotch Shortbread
Christmas cookie baking is one of my favourite things to do during the holidays. I love how reassuring it feels to pull out our favourite family recipes year after year, try a few new ones and especially, enjoy the time together baking and (of course) eating all the yummy treats! This Salted Butterscotch Shortbread is a little bit sweet and a little bit salty: the perfect holiday combo! This is my Aunt’s recipe that I switched up slightly by adding the butterscotch chips and a sprinkle of sea salt. Salted Butterscotch Shortbread
Equipment
- Stand Mixer
Ingredients
- 1 cup butter unsalted
- ½ cup icing sugar
- 1 ¾ cup flour
- 1 cup butterscotch chips
- ½ cup cornstarch
- ¾ tsp baking powder
- ¼ tsp salt
- 2 tsp vanilla extract
- 1 tbsp sea salt
Instructions
- Beat butter and icing sugar in stand mixer.
- Add vanilla and beat until creamy.
- In separate bowl, combine flour, cornstarch, baking powder and salt.
- Add half of flour mixture to butter and sugar mixture and beat until combined.
- Stir in butterscotch chips and the rest of flour mixture with a wooden spoon.
- Roll into 1-inch balls and lightly press down with a floured glass.
- Sprinkle very lightly or to taste with sea salt.
- Bake at 350°F for 12-15 minutes.
Tip: Line the outer rim of a cake stand or plate with Christmas greenery and top with Salted Butterscotch Shortbread for an extra festive look. These are delicious with an egg nog latte and are perfect for gift giving or a holiday cookie exchange.
