Pumpkin Spice Streusel Topped Muffins

Moist and delicious pumpkin spice muffins with a yummy struesel topping!
Servings: 12 muffins
Course: Breakfast, Snack

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 15-ounce can pure pumpkin
  • 1/2 cup butter melted
  • 2 eggs large
  • 2 tsp vanilla
Streusel Topping
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 2 tsp cinnamon
  • 2 tbsp butter cubed
  • 1/4 cup instant oats optional

Method
 

For The Muffins:
  1. Preheat oven to 350° F
  2. In a large bowl, combine flour, sugar, cinnamon, pumpkin pie spice, ginger, nutmeg, baking powder, baking soda and salt.
  3. In a separate bowl, whisk pumpkin, butter, eggs and vanilla.
  4. Add the pumpkin mixture to the flour mixture and mix gently just until combined.
  5. Divide batter evenly among muffin cups.
For The Streusel Topping:
  1. Combine flour, sugar, cinnamon and oats (if using) in a small bowl. Using a fork, combine cubed butter until coarse crumbs form.
  2. Sprinkle topping evenly over muffins.
  3. Bake for 22 minutes or until toothpick inserted in centre comes out clean.
