Festive Tiramisu Trifle

Tiramisu but make it a trifle. Very easy but looks fancy!

Ingredients
  

  • 300 ml good strong coffee
  • 4-6 fluid ounces amaretto liqueur
  • 500 g mascarpone cheese
  • 2-3 cups vanilla pudding
  • 1/2 package sponge cake fingers the dry kind
  • 3 ounces good quality dark or milk chocolate roughly chopped
To serve:
  • 3-4 tbsp slivered almonds lightly toasted
  • 2 tbsp chocolate roughly chopped or grated

Equipment

  • Stand or hand mixer
  • footed trifle bowl

Method
 

  1. Mix coffee and liqueur in a wide dish.
  2. In stand or with hand mixer, combine the mascarpone with the pudding until smooth.
  3. Dip about a third of the sponge fingers in the coffee/liqueur mix and line the bottom of your dish with them. Drizzle a bit more of the liquid overtop.
  4. Sprinkle a third of the chocolate followed by a layer of the Mascarpone/pudding mix (about a third of it).
  5. Repeat twice.
  6. Chill for a least 2 hours or overnight.
  7. Sprinkle with almonds and more chocolate just before serving and/or add sugared cranberries and sprigs of rosemary.
