Mini Pumpkin Spice Loaves with Cream Cheese Icing
Mini pumpkin loaves with mild spices and a tasty cream cheese icing.
Stand or hand mixer
- 2 cups sugar
- 2 cups pure pumpkin
- 2 eggs
- ½ cup oil
- 2 ½ cups flour
- 1½ tsp baking soda
- 1 tsp cinnamon
- ¾ tsp allspice
- ½ tsp salt
Cream Cheese Icing
- 1 pkg(250g) cream cheese softened
- ¼ cup butter softened
- ½ tsp vanilla
- 1 cup icing sugar sifted
To make loaves:
Combine sugar, pumpkin and eggs in mixer. Add oil and beat.
In medium bowl, combine dry ingredients.
Blend into pumpkin mixture just until mixed.
Pour into 4 greased mini loaf pans or 2 regular loaf pans.
Bake at 350° for 55 minutes or until knife comes out clean.
Let cool slightly in tins before running knife around the edges. Remove and cool slightly on a wire rack.
Cream Cheese Icing:
In mixer, beat cream cheese with butter until smooth.
Beat in vanilla.
Beat in icing sugar, one-third at a time until smooth.
