Mini Pumpkin Spice Loaves with Cream Cheese Icing

Mini pumpkin loaves with mild spices and a tasty cream cheese icing.

  • Stand or hand mixer
  • loaf pans


  • 2 cups sugar
  • 2 cups pure pumpkin
  • 2 eggs
  • ½ cup oil
  • 2 ½ cups flour
  • tsp baking soda
  • 1 tsp cinnamon
  • ¾ tsp allspice
  • ½ tsp salt

Cream Cheese Icing

  • 1 pkg(250g) cream cheese softened
  • ¼ cup butter softened
  • ½ tsp vanilla
  • 1 cup icing sugar sifted


To make loaves:

  • Combine sugar, pumpkin and eggs in mixer. Add oil and beat.
  • In medium bowl, combine dry ingredients.
  • Blend into pumpkin mixture just until mixed.
  • Pour into 4 greased mini loaf pans or 2 regular loaf pans.
  • Bake at 350° for 55 minutes or until knife comes out clean.
  • Let cool slightly in tins before running knife around the edges. Remove and cool slightly on a wire rack.

Cream Cheese Icing:

  • In mixer, beat cream cheese with butter until smooth.
  • Beat in vanilla.
  • Beat in icing sugar, one-third at a time until smooth.
