Pumpkin Spice Streusel Topped Muffins

Moist and delicious pumpkin spice muffins with a yummy struesel topping!

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 15-ounce can pure pumpkin
  • 1/2 cup butter melted
  • 2 eggs large
  • 2 tsp vanilla

Streusel Topping

  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 2 tsp cinnamon
  • 2 tbsp butter cubed
  • 1/4 cup instant oats optional

Instructions
 

For The Muffins:

  • Preheat oven to 350° F
  • In a large bowl, combine flour, sugar, cinnamon, pumpkin pie spice, ginger, nutmeg, baking powder, baking soda and salt.
  • In a separate bowl, whisk pumpkin, butter, eggs and vanilla.
  • Add the pumpkin mixture to the flour mixture and mix gently just until combined.
  • Divide batter evenly among muffin cups.

For The Streusel Topping:

  • Combine flour, sugar, cinnamon and oats (if using) in a small bowl. Using a fork, combine cubed butter until coarse crumbs form.
  • Sprinkle topping evenly over muffins.
  • Bake for 22 minutes or until toothpick inserted in centre comes out clean.
